The not quite ripe green plums are wiped with a cloth, pricked and laid in a jar.
The vinegar and sugar are mixed together and poured over the plums once the sugar has melted. Left standing thus for 1 day and night.
The juice is poured off and boiled with the cinnamon for about ¼ hour, or until all the scum is removed; poured warm over the plums, which are immediately covered with a cloth.
After 2 days the juice must boil down until it is even.
The plums are only put back together with the liquid once it is completely cold. Tied over.
