The ripe, fresh plums are wiped with a cloth, pricked once or twice with a needle, and laid in clean, dry glasses.
The vinegar and sugar are boiled together until it is clear and well skimmed, the cloves and cinnamon are given a quick boil in it, and everything is poured boiling over the plums. The plums are covered and left until the next day.
The juice is then poured off, boiled up, skimmed, the plums are added and given a brief boil, lifted out with a slotted spoon and laid in glasses or jars; cinnamon and cloves are placed in between.
The juice boils down until it is thick, poured boiling over the plums, which are tied over the next day.
