Freshly picked, preferably seedless cucumbers are peeled, cut into slices, sprinkled with salt, left for half an hour, dried on a clean cloth, and spread well over it; another cloth is laid on top and a weight is placed on it. This is repeated in a dry cloth until the cucumber slices are quite dry.
The cucumber slices are now placed in a stoneware crock, which is filled only halfway, covered with the vinegar and over that again a layer of oil a couple of centimetres thick. The crock is tied up with bladder and kept in a cold place.
In this way the cucumbers keep for a long time. When the salad is to be used, it is dressed with fresh vinegar, fresh oil and pepper, or one may use some kind of salad sauce.
