The plums are dried in a clean cloth, pricked, and placed in a dish. The sugar is put over them. It is covered and left until the next day.
Then the juice is poured off the plums, boils over low heat, and is skimmed. When it has boiled for a quarter of an hour, the plums are added and steep for 10 min.
Then the whole thing is poured into the dish and left covered until the next day.
The juice is then again poured off the plums and boils until it becomes even. Meanwhile the plums must have been placed in the crocks intended for them, and the boiling juice is poured over them.
They are covered and left until the next day, then paper dipped in a sterisol solution is laid over, or melted, dry paraffin is put over the top, and the crocks are tied shut.
