The pears are dried, given a boil in boiling water, placed in cold water, peeled and placed again in cold water; drained on a clean cloth, and weighed.
For 1 kg of pears take 1 kg of sugar; half the sugar is boiled with 2 dl of water for 10 min. Skim, cool, and pour over the pears, which are left until the next day.
Now the brine is poured off and the rest of the sugar is added; this boils for 5 min., is cooled, and poured over the pears.
The next day the juice boils for 0.75 hour, the pears are given a quick boil in it; place in crocks or wide-necked bottles, tie over the top at once.
