Brush 100 small cucumbers in cold water and place them in brine overnight. The brine must be strong enough for an egg to float.
Cauliflower, yellow and white roots, green beans and shelled peas are cleaned and boiled half-tender separately in salted water (1 heaping teaspoon salt per liter of water), then laid on a cloth so the water can drain off well.
The vegetables are cut up and placed with the cucumbers and cauliflower in glasses or jars with a little whole mace, silverskin onions, whole mustard seed, whole white pepper, and very little whole chili pepper, cut into narrow strips and soaked.
Cover with cold, boiled vinegar. Cork or tie over with parchment paper.
