Over nice small cucumbers pour boiling strong salted water, containing a little saltpetre, so that they keep their green colour.
This is repeated 3 days running, pouring the brine off the cucumbers once they have stood for a full day and reheating it.
The cucumbers are then taken up, dried well in a clean cloth, and packed into dry jars or crocks together with asparagus beans, cauliflower and carrots, which are boiled briefly in salted water, as well as chili pepper, small onions, dill, whole peppercorns and slices of horseradish.
Cold boiled vinegar is poured over the cucumbers so that it covers them.
The jars are corked or covered and kept in a dry place.
