Large, fully ripe rose hips are halved, cleaned carefully, rinsed well and given a quick boil in boiling water with the juice of a lemon added.
When the water has been strained off, weigh the rose hips. For each kilo of fruit, 1 kilo of sugar.
Moisten the sugar, bring it to a boil, put in the rose hips and boil until they are clear, remove them, flavour the juice with vanilla, boil, skim, and pour warm over the fruit.
