Rose hips are gathered, cleaned, dried in a lukewarm oven, and kept in paper or linen bags.
When they are to be used for soup or sauce, they should be soaked in water the evening before, and boiled in the water in which they have soaked.
They are boiled completely to a pulp, strained, and the juice is put back in the saucepan, where it is flavoured with a little whole cinnamon, sugar and lemon juice to taste, and thickened with either potato starch or sago flour.
