To ½ kg. orange peel use equal parts sugar and ½ l. water.
Cut the peels in two and soak them in salted water (1 heaped teaspoon of salt to 1 l. of water). Repeat this 3 times; between each time rinse the peels in cold water and dry them.
Then set them over the heat in cold water and boil until tender, after which cut them into fine strips.
Boil the sugar and water for ¼ hour, add the peels and let them simmer gently until they are translucent and the syrup is nearly reduced.
When the peels are well coated with sugar, lift them out and then dry them for a few minutes in the oven.
You can weave the strips into little baskets while they are still warm and serve bonbons in them.
