If we are to have a good cooking ham for Christmas, it must be purchased as soon as possible.
The ham should lie 3 weeks in a sugar brine or in a "Westphalian brine", which is boiled from porter, well-rinsed Spanish salt, saltpetre and powdered sugar, skimmed well, and a handful of juniper berries and one teaspoon of sage added.
This mixture is poured boiling over the ham, which is basted and turned daily for 3 weeks.
It must be given a light, cold smoke.
