Pressed salt cod is soaked for a full day and boiled with ½ teaspoon of baking soda in the water.
Once it is cooked, remove the largest bones and carefully flake off the skin. When the fish is arranged, pour the celery sauce over it.
The water in which the celery was boiled is to be used together with creamy milk for the sauce.
Stir together a pat of butter and a tablespoon of flour, add the celery stock and 1 dl. of thin cream gradually. Taste to see whether it is salty enough. Add the finely cut celeriac.
