Oysters are served, after they have been opened, in their shell on a flat dish, garnished with lemon slices. If the shell has opened by itself, the oyster is dead and unfit as food.
Oysters are served well cleaned of the beard, in puff pastry vol-au-vents.
The sauce is made from butter, a little flour, and thinned with stock from the beards, which have stood a while and steeped in boiling water, in which is the juice of a lemon.
Before the sauce is poured over the oysters, sherry is added to taste.
Also served in timbales and fish pudding, or in a sauce for fish pudding.
