Boil the washed, cleaned rosehips with the water for 1.5 hour; strain.
Melt the butter, stir in the flour, thin with the strained stock and simmer for 0.25 hour; add sugar to taste.
Serve with browned white-bread cubes or stiffly whipped cream.
The soup can also be thickened with potato flour, in which case no butter and wheat flour are used.
If dried rosehips are used, then 250 g rosehips to 3 l water, 50 g potato flour, sugar to taste and 1 dl redcurrant cordial or raspberry cordial. Soak the rosehips overnight in the water and boil in the soaking water. The cleaned, blanched raisins are added to the soup.
The soup can be made with barley groats; soak and boil the rosehips and groats separately and combine when the rosehips are mashed. Rosehip purée is also excellent to use.
