Whisk the eggs and sugar well for 0.25 hour; blend in the whipped cream, then add the remaining ingredients.
Cooked apples, cut into small pieces, or jam may be added.
Grease the munk pan with clarified butter; fill a small spoonful of batter into each hollow, fry until golden brown, turning often with a fork.
Serve hot with sugar and jam on the side.
Instead of baking powder you can use 30 g yeast, dissolved in a little milk and stirred into the batter; set the crock in lukewarm water and let it stand until it rises. Fry the same way as those made with baking powder.
Munker can be made with unskimmed milk: to 0.5 kg flour use 1/3 l whole milk and 2/3 l skimmed milk, 4 teaspoons baking powder, a little salt and sugar.
Munker can also be made with rolled oats: 0.25 kg Frigg rolled oats, 1 l milk, 150 g wheat flour; salt, sugar and baking powder as above, spices to taste. Make the batter in the evening and add the baking powder the next day.
