Scald the almonds, dry them in a cloth, and grind them 2 times in the almond mill, then pound them with the sugar and gradually a little egg white and a few drops of water.
This is added so that the oil is not pressed out and the mass become greasy on the outside, but rather dry and crisp.
When the mass is completely fine and smooth, it is ready; place it in a fairly deep dish until it is to be used, with a napkin over it, but not touching the marzipan.
From the marzipan mass, various things are made, such as marzipan loaves, carrots, potatoes, peas, bananas, lemons, etc., just as it is rolled out to cover or decorate a cake. Various fruit colourings are used to colour the marzipan.
