Set the milk aside in deep plates or dishes.
To make the milk set quickly — it takes on a bitter taste if left too long — put 1 drop of vinegar or 1 spoon of soured milk in each plate; then pour in the fresh strained milk.
Set it in a mild, clean place. Milk readily takes up odours; therefore place nothing smelly or strong-smelling next to it.
When the clabbered milk is eaten, crushed rusk and sugar are good to have with it, strewn over the top of the milk.
