2 litres of fresh strained milk are brought to a boil together with 6 full tablespoons sugar, and to this add 35 grams gelatine, plus 125 grams sweet and 8 grams bitter chopped almonds.
Once the gelatine is well melted, pour it all into a dish, and add one heaped teaspoon salt and a good dram of cognac or rum.
After 4 to 5 hours, when the mixture begins to set, stir it well so the almonds do not stay lying on top.
It is then poured into glass dishes. Best made the day before it is to be used. Serve with jam or red sauce.
