Beat 4 eggs, then stir in ¾ litre fresh strained milk, 2 full tablespoons sugar, 1 teaspoon salt, 1 small knifepoint of nutmeg.
In an omelette mould, place on the bottom either a layer of raspberry, strawberry or cherry jam. Or you can also cook plums (prunes), from which the stones should be removed, in very little water with sugar, and place this on the bottom of the dish.
On top sprinkle 2 full tablespoons crushed sugar rusks. The egg mixture is then poured over, and it is placed in the oven and left there until it is light brown — no longer.
This pudding is good both warm and cold.
