If the beestings are really good and rich, you can usually mix 1 part from the first milking with 2 parts ordinary milk. Beestings vary in strength, so first test whether the mixture sets firmly enough by putting a little of it on a warm oven or stove.
For about 8 people take, say, 1 litre from the first milking and 2 litres of ordinary milk. Add a heaped tablespoon of salt, 1 heaped tablespoon of sugar and 2 drops of almond essence.
Whisk everything well together and pour it into either a tin or an earthenware dish, and let it stand in the oven for 1 to 1½ hours. It is then usually done.
Or cook the kalvedans in a tin pail set down in a pot of water. The water must stand higher than the milk in the pail, so it is best to cook in a tall pail. Place something heavy on the pail's lid to keep it steady. When the kalvedans has cooked for an hour it is usually set. Always take care to top up the water in the pot as it boils down.
Alongside the kalvedans one eats either sweet creamy milk or boiled milk.
