Put the mixed milk in an iron pot and bring to a boil, stirring constantly from the bottom. Lift the cheese out into a piece of thin cloth laid over a sieve; let the whey drain off well.
The next day, work the cheese quite fine, cover it with a clean cloth and set it to ferment in a warm place. Work it for 4 days, a couple of times a day. On the 5th day, knead the cheese with the caraway and salt to taste. Press it down into a cheese mold or a small crock.
Boil the whey down rapidly, stirring constantly; when it thickens, add 2 dcl. of sweet cream if you wish to splurge; add sugar to taste. Ladle it up when it is like a thin porridge, and work it well to make it as smooth as possible. Press into molds or shape into cheeses.
N.B. These are cheeses of sweet buttermilk; if the milk will not curdle, you may add a little sour milk.
