Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Norwegian green herb soup (1900) of finely chopped caraway leaf stirred into meat stock with a butter roux, seasoned with nutmeg and served with poached eggs.

Karvekål er en grønn urtesuppe der friske karveblad hakkes fint og jevnes inn i kjøttkraft. Retten hører til de grønne vårsuppene og er hentet fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900). «Forlorne æg» er pocherte egg.
Prepare the caraway
Wash and scrape the caraway thoroughly clean, and chop it finely.
Thicken the soup
Melt the butter, stir in the flour and gradually thin it with the meat stock. Add the chopped caraway.
Simmer and season
Let the soup simmer for 10 minutes, take it off the heat and season with nutmeg.
Serve
Serve the soup with poached eggs.
