Whip 12 egg yolks and 6 whites with the sugar for 1/4 hour; pour into this, while stirring, the boiling cream, boiled with the split vanilla pod.
Cool it and pour into a mould containing the following set glaze: Boil the sugar for the glaze in an iron pot or frying pan with the water until it is dry and has melted again; take it off the heat the instant the sugar is light brown, stir it until you get the colour you want (chestnut brown), and pour it at once into the mould, which is turned quickly around until all the sugar has set.
Place the mould in the oven in a pan of water and cook for 1 1/2–2 hours.
Turn out when cold. Best made the day before it is to be served. Serves 8 to 10.
