The roast is washed in lukewarm water, dried, placed in the hot roasting pan with 50 g butter rubbed over the roast, and set in the strongly preheated oven.
Place the meat side up in the pan, never turn it, and never pierce it with a fork.
When the roast is light brown, the warm water and the milk are added, salted, and basted every quarter of an hour. Roast for 2—3 hours according to thickness.
Serve the sliced roast and kidney on a warm platter and with salad or other vegetables.
Sauce: Butter and flour are browned slowly, thinned with the strained stock, simmered ¼ hour, and the sour cream and salt added to taste, as well as a pinch of colouring if needed, but preferably not.
