The rabbit is most easily skinned while it is warm, by hanging it up by the hind legs and turning the skin off it.
The skinned, cleaned and washed rabbit is put over the heat with just enough boiling water to barely cover it. Simmer covered for about 1 1/4 hours; the cleaned root vegetables are boiled along with it; take them out when tender and cut them up neatly.
As the stock boils down, add a little milk now and then.
Butter and flour are stirred together, thinned with the strained stock from the meat, and brought to a boil.
The neatly cut-up rabbit pieces and vegetables are heated in the sauce. Salt and pepper to taste. Finely chopped parsley is sprinkled over when serving.
