Open the turkey; pull the sinews out of the thighs by loosening the skin around the bottom near the bones and drawing the sinews out with the feet.
Clean the turkey, rub it with salt and cover it with slices of pork fat; place it in a roasting pan with 100 g butter and put it in a hot oven.
Baste with about 1 l of boiling stock or water when it begins to brown; then baste every quarter hour with the pan juices; roast about 2 hours.
For the sauce, reduce the pan juices, and it is good to treat the sauce to some truffles. Alternatively, you can slowly brown butter and flour and thin first with 1 dl water, then with the stock.
Serve with boiled apples, prunes and vegetables. The turkey can be stuffed with "bread stuffing" or with apples and prunes.
