The hens are plucked or scalded, opened, cleaned and left in water overnight.
Put over the heat in boiling water for 5 min., placed in cold water, then put over the heat in boiling water with one spoonful of salt.
Skim, boil covered until tender, 3–5 hours of boiling; put in cold water; the outer skin is removed, and the hens are cut up.
Sauce: melt 60 g butter, stir in 50 g flour, thin with the stock, about 3/4 l, simmer 15 min., add 1 pinch of cayenne and 1/4 teaspoon of sugar.
The sauce can be thickened with 1 egg yolk stirred together with 1 dl cream. Instead of cayenne, curry or tomato purée can be added to taste.
Boiled celery, cauliflower, green peas or macaroni can be served in the sauce.
