The cabbage head is blanched in lightly salted water, the leaves are removed as whole as possible; the thickest part of the stalk is cut out.
On each leaf 1 spoonful of meat forcemeat is laid along the stalk, then rolled up well, the cabbage leaf first being folded in from the sides. It must not have the shape of a parcel!
Tied round with thread dipped in boiling water. Then they are placed in the water in which the head was blanched and boiled for 0.5 hour. The thread is removed.
Served with stirred butter, or the cabbage rolls are browned in butter.
