The fresh, ripe plums are wiped with a cloth, laid in a jar, and poured over with ¼ litre of water; the jar is covered, set in a pot of boiling water, and boils there until the plums are quite tender. Left until the next day, or at least 4 to 5 hours.
When the fruit is cold, it is pressed through a hair sieve.
The stones are cracked and boiled together with the plum residue, the cinnamon, the cloves and ¼ litre of water for 20 minutes, after which they are strained, mixed with the red wine and as much water as red wine, along with sugar to taste.
Everything is mixed together well, cooled completely and served with broken rusks alongside.
