Cut the cleaned kohlrabi into not-too-small pieces, put over the fire in the boiling water with butter and salt; boil until the kohlrabi is tender.
Pour off half the water and add the meat stock - second cooking - instead; stir the flour into a little of the soup, stir it in once the soup is boiling, add the parsley and nutmeg, and let the whole gently simmer for 5 minutes.
NB. If you have no meat stock, add about 2 deciliters of cream instead; the cream is then stirred little by little into the flour, and this thickening is whisked into the boiling soup and boiled for 10 minutes. Then 50 gr of cold butter is added just as the soup is to be served.
