The washed meat is chopped into small pieces and browned in a pan in the browned fat together with the onion, the carrot and the celeriac, placed in a pot and covered with the boiling water, along with salt, pepper and the bay leaf.
This simmers under a lid for about 3 hours.
Brown the butter, stir in the flour, thin with 2 L. of the strained stock above; simmer for ¼ hour with the ham.
Take up the ham, cut it into strips, put it in the soup, which is also given sherry, and, if you like, a small plateful of boiled lentils, meatballs, boiled root vegetables, mushrooms, egg dumplings, or it is served only with caraway sticks.
