Swede cut into thin strips and braised uncovered with caraway, salt and water until tender, then finished with vinegar and sugar in the style of sauerkraut. From Henriette Schønberg Erken's «God, billig dagskost» (1941).

Braise the swede
Cut the peeled swede into thin strips. Melt the fat in the pot, add the swede, the caraway and the salt along with the water. Let this cook uncovered until the swede is tender. Finally add the vinegar and sugar.
