Wash the potatoes well and boil them unpeeled; pour off the water once they are cooked.
Mix the flour and coarse meal. Make a well in the middle of the flour and hold a colander with the potatoes over it; press the potatoes through the colander into the flour together with the water in which the yeast has been dissolved. Only the potato skins should remain in the colander.
Leave the dough to rise for 2 hours; knead it again with a little more water in which the salt has been dissolved. Leave to rise for another hour.
Shape into 1 kg loaves, which are left to rise for 1/4 hour, pricked and baked in a hot oven for 3/4 to 1 hour.
A mixture of coarse wheat meal and home-grown rye also makes an excellent bread.
