Dissolve the yeast with 1 teaspoon sugar into a thin batter, add 1/2 decilitre lukewarm milk and 1 good tablespoon wheat flour, stir together, dust with a very little wheat flour, cover, and set near the stove to rise until the yeast has doubled.
Sift the flour into a bowl, add half the butter and sugar, stir in the spices, add the lukewarm milk little by little, and work until the dough is fine. Work the yeast in once it has fully risen. Set to rise near the stove for 1/2 hour.
Now work in the rest of the butter and sugar and let the dough rise again for 20 minutes. Knead now on the pastry board, adding the cleaned, washed raisins and the finely cut candied peel.
Divide the dough into 2–4 parts, work well, lay on a greased, cold tray, leave to rise for 15 minutes, brush quickly with beaten egg, put into a good hot oven, and it is baked in about 3/4 hour.
NB. Dough with yeast must never be left to rise directly on the stovetop. Milk or water for thinning must be only lukewarm. The trays must never be hot when bread or cakes are laid on them. The oven door must not be opened out of curiosity every 5 minutes.
