Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Grynsod (barley soup) from 1900: whole barley grains are soaked overnight and simmered 2–2½ hours in salted stock with leek, celeriac and other root vegetables, finished with plenty of finely chopped parsley. About 8 servings.

«Grynsod» – en enkel, mettende grynsuppe fra Erken og Steens «Kogebog for skole og hjem» (1900). Hele gryn (bygg) bløtlegges og kokes langsomt i kraft med rotgrønnsaker. «Sod» er et gammelt ord for suppe/kraft, og retten er typisk for tidens sparsommelige husholdningskjøkken.
Soak the grains
Wash the grains and soak them overnight. Reserve the soaking water – it is used in the cooking.
Boil the grains
Add the grains with the soaking water to the cold stock. Let it simmer for 2 to 2½ hours.
Boil the vegetables along
Let leek and celeriac boil along until they are tender. Carrot, turnip and parsley root also do well in the soup.
Serve
Be generous with finely chopped parsley before serving.
Tittelen «Grynsod» er modernisert til Grynsuppe. «Hele gryn» presisert som hele byggryn, «grønsager» tallfestet til ca. 300 g. «Næper» modernisert til nepe. Priser fjernet. Fremgangsmåten beholdt tro mot originalen.
