Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

A festive white wine soup: pearl barley cooked out in water for about 3 hours, with raisins, blanched almonds cut lengthwise, white wine (Graves) and sugar added, colored with saffron. From Erken & Steen's "Kogebog for skole og hjem" (1900).

Hvitvinssuppe var en finere selskaps- eller festsuppe, tydelig dyrere enn de øvrige fruktsuppene i kokeboken – vinen alene sto for det meste av kostnaden. Originalen bruker graves, en tørr hvitvin fra Bordeaux. Oppskriften er fra Henriette Schønberg Erken og Caroline Steens «Kogebog for skole og hjem» (1900).
Cook the barley
Wash the pearl barley in cold water. Put it in the pot with 3 liters of water and cook it for about 3 hours.
Add raisins
Rinse the raisins and add them to the soup a little before it is done cooking.
Finish the soup
Blanch the almonds, cut them lengthwise, and add them together with the white wine and sugar to taste. Stir in a little dissolved saffron for the sake of color.
«Graves» er generalisert til hvitvin (½ flaske ≈ 375 ml) med note om originalens vintype. «Skollede» mandler er modernisert til skåldede. Prisene er utelatt fra ingredienslisten. Fremgangsmåten er tro mot originalen.
