Sift the flour, rub it in with the butter, add the salt, the egg yolk and the water little by little; work it into a cohesive dough; roll it out, not too thin; cut it into strips a good 1/2 cm thick, which are rolled round.
A round mould is buttered and coated with breadcrumbs, then lined all around with the rolled-out dough, beginning at the bottom of the mould; the stew is placed in the middle of the mould; a rolled-out lid of the dough is laid over, pressed down firmly, and the mould is baked in a good, hot oven for about half an hour.
Turn out; serve as a dish on its own or with various meat dishes.
