The cauliflower is cleaned, left for half an hour in cold water with vinegar — 1 litre of water, 1 tablespoon of vinegar —, and put over the heat in boiling, salted water — 1 heaped teaspoon of salt to each litre of water.
First cut a cross in the stalk of the cauliflower; this way the stalk cooks tender as soon as the flower; stick the head onto a kitchen fork just above the stalk and hang the fork with the cauliflower on the edge of the pot; in this way the flower is kept under the water the whole time.
When the cauliflower is tender, take it up carefully and place it in the middle of a round dish; the boiled, halved beans are arranged in small bouquets around it, alternating with carrot cups filled with peas; around these again a small bouquet of carrot fringes, alternating with the asparagus; 4–5 stuck into a ring cut and stamped out from a raw carrot or beetroot.
Over the whole, sprinkle the finely chopped parsley. Serve as a dish on its own with asparagus butter.
