Soak the tongues in water for 2 hours, then put them over the heat with thin meat stock, enough to stand well above the tongues, and add the cleaned onion, parsley, celery, peppercorns and salt to taste.
Simmer until the tongues are done, that is, until they can be split with great ease.
Rub the tongues with pepper and salt, turn them in half-beaten egg and crushed rusk, and fry them a nice golden brown in the deep-fat pan, or brown them in a pan in lightly browned butter.
Arrange the tongues in a wreath on the dish; in the centre place various cooked vegetables, each kind in a little group of its own, with small pieces of cold butter placed here and there.
For the sauce, strain the stock the tongues were cooked in, put it back over the heat, boil down well, thicken with a couple of egg yolks, and add 1 teaspoon lemon juice and salt to taste.
