Scald the hen, open it, wash it, and put it over the heat with the water and salt, just enough to cover. It cooks 2–4 hours depending on its age. Good chickens are cooked after about 1 hour.
Take it up, rinse it with cold water to make the flesh whiter, cut it into suitable pieces, and keep it warm in some of the stock.
Melt the butter, stir in the flour, thin with the stock, which has been strained and skimmed, bring to a boil, simmer gently 5 to 10 min., then stir in the cream, the sugar, the lemon juice, the beaten egg yolks and salt to taste. The sauce must not boil after the egg yolks have gone in.
Serve the meat on a flat dish after 3–4 small rosettes of lettuce have been placed around its edge. Pour some of the sauce over the meat, and lay the well-warmed asparagus in bundles between the lettuce. Serve the rest of the sauce alongside.
N.B. Hen is excellent for haybox cooking. In the evening, after it has been well cleaned, let it boil on the stove about 20 min., then set it straight into the haybox and let it stand there and finish cooking all night.
