The meat is cut into slices and pounded well. On each slice of meat is placed a dessert spoon of forcemeat, and over this is sprinkled the finely chopped parsley, pepper and salt.
The pieces are rolled up and tied with string. The butter is half-browned in a pan, the meat is browned in it, the water is poured on, and the meat simmers gently in this until tender, about 1/2 hour.
The string is removed, the roulades are cut into slices on the diagonal, served on a flat platter with the sauce around.
Sauce: the butter is browned, the flour is stirred in, thinned with the strained stock, the cream, cayenne and sugar are added, and it simmers gently for 5 min. Taken off the heat, the wine and salt are stirred in to taste.
