The tongue is washed, scraped, put over the heat in boiling, salted water — enough for the water to cover the tongue — and cooked under a lid until the tongue is tender, about 3 hours; the tongue is kept warm in the stock.
Melt the butter, stir in the flour, thin with stock from the tongue into a suitably thick sauce. Capers, pepper and juice from the squeezed lemon are added. The sauce is thickened with the egg yolk.
The tongue is served on a warm dish, cut into slices which are laid back together as if the tongue were whole; the sauce is poured over, and small florets of the cooked cauliflower and the cooked peas are placed alternately around it.
