The calf's head is scalded, split lengthwise, and soaked in water for 12 hours; the brain is removed and soaked separately.
Set the head over the heat in boiling, salted water. When it is cooked, after about 2—3 hours or when the meat loosens from the bones, take the meat off, lay it out on a dish to cool under a light weight. Skin the tongue, and cut everything into fine strips.
Brown the butter and flour well, thin with the stock, simmer for ¼ hour, add cayenne and salt to taste.
The cut-up meat, together with small meat and fish balls, is warmed in the sauce. Serve with hard-boiled eggs cut into 4 pieces, laid over on the dish.
It can be made "mock mock"; then use cut-up, boiled veal instead of the head.
