The blanched cabbage head may well boil for 0.25 hour, is hollowed out with a sharp knife, and the hollow is filled with meat forcemeat. A couple of leaves are laid over as a lid.
A cut is made in the cabbage stalk; the head is placed in a cloth that is tied together at each side, set over the heat in boiling, salted water, and boiled, according to size, 1 to 2 hours. Served with white sauce.
N.B. The hollowed-out cabbage may be boiled and creamed, used for sauerkraut, or, for everyday use, it may be boiled, chopped and mixed cold with the forcemeat the head is to be filled with.
The cabbage head may also be filled with fish forcemeat. The hollowing-out may also be done at the stalk.
