The meat is washed in lukewarm water, cracked, and set over the heat in boiling, salted water; take it up when it is cooked, after about 1½—2 hours.
Brush the meat side with beaten egg white or salted milk, then turn it in a mixture of crushed rusk, finely chopped parsley, and salt.
Brown in a pan in the lightly browned butter. The juices in the pan are boiled out with a little veal stock.
Breast and shoulder of veal may be brine-cured and served boiled with vegetables.
