Clean the heart of sinews and veins, and fill the empty cavity with butter and parsley that have been kneaded together.
Rub the heart with a halved onion and salt, and set it over the heat in a small pot with boiling milk, enough for the milk to reach halfway up the hearts.
Add 100 g butter and 1 dessertspoon meat extract, and let it simmer gently under a lid for 3 to 4 hours. If the stock reduces too much, you must add a little more during cooking.
For the sauce, brown butter and flour, thin with the stock and 1 dl cream, and add salt and pepper to taste; boil for 10 min.
The heart can also be prepared like game, in the same way as liver.
