Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Flummery from 1900: a lemon and sherry jelly in which water, sherry, lemon zest and juice, sugar and gelatine are brought to a boil, strained over beaten egg yolks, gently warmed without boiling, cooled and set in a mould.

En engelskinspirert sitron- og sherrygelé – «flummery» – fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900). Navnet vitner om britisk innflytelse på norsk borgerlig kjøkken rundt århundreskiftet. Denne oppskriften har ingen prisliste i originalen.
Boil the liquid
Put water, sherry, finely grated lemon zest, pressed lemon juice, sugar and the snipped gelatine into an enamelled pot. Bring to a boil, and let it stand covered for 10 minutes.
Strain over the egg yolks
Strain the mixture over the beaten egg yolks.
Heat gently
Pour everything back into the cleaned pot and heat to the boiling point without letting it boil. Take the pot off the heat.
Stir and cool
Stir until the mixture has cooled well.
Set in a mould
Pour into a mould rinsed with cold water and chill until the jelly is set. Turn out before serving.
