Melt the butter, stir in the flour, thin little by little with the stock, bring to a boil, and take off the heat. Stir in the fish, likewise the spices and salt to taste.
Roll the puff pastry out thin, cut it out with a glass wide at the top, or a round cutter. Place a spoonful of the cold, stiff filling on one half of the pastry; fold it over after brushing the edge with a very little cold water or egg, press it firmly shut along the edges, turn it in egg white, then in rusk crumbs, and deep-fry golden brown in the lard.
Arrange in a pyramid on a dish lined with a folded napkin; garnish with parsley.
N.B. Leftovers of chicken, sweetbread, ham, liver pâté, etc. can also be used, stewed, for rissoles.
