For cooking fish stock, use cleanly washed remains from fish dishes — such as heads, skin and bones, once the fish flesh has been scraped off; the eyes must be removed as they make the stock cloudy.
Likewise, cook into stock everything left after cutting fillets, or use the liquid the fish was cooked in, e.g. mackerel and herring etc., if it is not too salty. You can of course brine the fish.
For stock, put the fish trimmings over the heat in cold, salted water. Simmer, skim well and cook covered about 1 hour. Strain preferably through a straining cloth, unless you have a really fine sieve.
