The fish, preferably haddock, is cleaned, scraped free of skin and bones, and stirred with a wooden spoon in a bowl together with the potato starch and salt; stir well until it becomes stringy, about ¼ hour, then thin it out little by little with the milk and cream.
Add the boiled, cooled, finely cut macaroni, and finally the beaten eggs and the mace.
Fill into a well-greased dish and bake for ½ to ¾ hour in the oven.
Leftover fish gratin can be used for fish cakes, which are fried in a pan.
